Gvaot is a boutique winery, producing only 30,000 bottles of wine per year, allowing for individual attention to each bottle and guaranteeing a consistent standard of superior quality.
Established in 2005 by Dr. Shivi Drori and Amnon Weiss, it was born of a love of good wine and a belief that rare quality grapes grown in vineyards with a unique terroir combined with the expertise of the founders, would allow them to reach their goal – the production of quality wines by integrating modern technology with traditional methods.
Gvaot winery employs a uniquely long, slow fermentation process at lower than usual temperatures so as to extract maximum aroma from the grapes. This process allows more time for the yeast to gradually convert the sugar to alcohol and more time for the natural enzymes to produce a higher than usual concentration of aromatic compounds in the wine.
